The more he thought about it, the more angry he was and contacted his supplier in Shanghai to complain about the quality of the product. The supplier refused to acknowledge this. Manager Hu calmed down and checked his wine. He found that some other products in the shop also had problems with convex plugs, but the wine placed in the underground warehouse was fine. He then realised that the root cause of the problems with the wines was the heat. Because the shop was closed at the end of each day, the air conditioning in the shop was switched off and, combined with the lack of ventilation, the temperature inside the shop reached over 40 degrees Celsius, causing problems with the stored wines. The underground warehouse, on the other hand, was also not air-conditioned, but because it was underground, the temperature was only 25-28°C and relatively humid, so the wines did not have problems.

 

After a careful inventory, Manager Hu found that the wine on the shop shelves was more or less problematic, including some new vintages of prestigious wines, as well as some table wines stored in the shop, a direct loss of more than 90,000 yuan. Manager Hu said, these wines can only do display samples later, and then sold will offend customers, in order to save a little electricity, the loss of 90,000 yuan, this electricity is a bit expensive!

 

I believe Manager Hu's experience is not an isolated case. At the moment, many cities across the country are experiencing hot weather, and "delicate" wines will face huge challenges during storage and transportation. "Customers don't pay attention to conservation, they only pay attention when something goes wrong!" The "woes" of wine operators

 

Dr. Cheng explains that this phenomenon of heat-induced deterioration of wine is known in the industry as Maderisation. Try exposing the wine to sunlight for a few minutes and you will notice that the wine's original fresh and pleasant fruitiness disappears, replaced by more cooked and unfresh flavours, flat aromas and a single, lacking complexity on the palate. The balance of the wine is quickly lost, the sweetness increases and the acidity is lacking, and even the colour of the wine becomes cloudy and less clear.

 

In terms of segmenting the wine chain, wine operators are relatively more concerned with storage conditions. Of course, the current storage conditions of wine merchants, many of which do not have a constant temperature, are not guaranteed to be around 15°C. In fact, our warehouse, from April to November, has a constant temperature and humidity 24 hours a day. It is usually in transit, or in the customer's warehouse or shop, that the wine deteriorates due to overheating and corking. Although a lot of knowledge has been spread about the need to control the temperature of wine, in reality, more than 80% of shops do not bother to turn on the air conditioning 24 hours a day, and even during our field visits there are cases where the air conditioning is not turned on during business.

 

In this regard, Xue Hongcai said that many of the wines on the shelves can only be displayed and not sold and are not suitable for drinking, but most people do not want to, especially this year when business is difficult. In fact, our own showroom has already made plans to stop drinking this batch of wine.

 

It is not possible for a wine supplier to check the condition of every bottle, because to do so would require opening every bottle, which is obviously not practical. But if the wine on the shelf, or improperly stored in the shop, is really bad, it is an offence to the customer to sell it. Therefore, distributors must be careful not to lose out on the smallest of things.

Is your wine protected under the high temperature warning?

 

There are three situations in which high temperatures are most likely to 'damage' wine: storage, logistics and trunking, and winemakers must take them seriously.

 

In terms of wine storage, many formal warehouses are able to address the issue of constant temperature and humidity, especially in the more mature wine markets. But there are still many simply put wine in the warehouse, mixed with products such as white wine. Wine merchants have the conditions to rent constant temperature and humidity warehouse as far as possible, do not lose a lot because of small.

 

The wine transportation process is also most vulnerable to high temperatures. A staff member from the Wuhan Sino-European International Supply Chain said that full cold chain transport is the best environment for wine logistics, and the Sino-European trains from China meet this condition perfectly. In domestic transport, the cold chain should also be achieved as far as possible to avoid damage to the wine due to high temperatures.

 

With the development of small group buying businesses, putting wine in the boot has become the norm. It is important to note that if the car boot is not air-conditioned, the internal temperature can reach 60 or 70 degrees Celsius in the sun, and at such high temperatures, wine may burst its cork overnight. For this reason, try not to keep wine in the boot if you are not drinking it immediately.

 

Of course, there is no need to worry too much about wine transport. As long as the wine is not in the open air, it is unlikely to get into trouble; express shipments use foam boxes, which can actually be insulated from the heat; and when it arrives on the express truck, the heavy goods are usually underneath, so the wine will not be overly heated. As long as more attention is paid, the wine will survive the heat of the summer!
